On our traditional offset smoker, smoke and rendered fat carry the flavor before sauce ever enters the conversation. We build from kosher salt, coarse cracked black pepper, and post oak smoke — no sugar-heavy rub and no finishing sauce. We season the protein, run it low over post oak until the pepper crust sets, and let rendered fat and clean stick-burner smoke do the work. Your plate starts with smoked chicken on the same salt-and-pepper foundation, with brisket, ribs, or another cut from the menu available alongside scratch pit beans and Fiesta Mac.
Tent the meat with foil and warm it gently so it stays moist while the sides heat through. Ready to plate in a few minutes.
